Laura Lamar will be auditioning her community cafe concept- small plates of fresh food sourced from neighborhood growers and purveyors.

Laura Lamar grew up eating quick and cheap food in the age of microwaves. This lack of epicurean exposure sent her on a quest for simple, healthy and savory foods. Working as a personal trainer/chef it became evident that people had little if any connection to food.  She strives to deconstruct the franken foods of the past and create a mode of fueling both the individual and the community simultaneously through food.

An environmentalist at heart she became determined to acquire and prepare foods in a way that was good for the mind, body, and spirit. Hence the name Karma which denotes that the meals shared are beneficial to the eater, the environment and the local economy.  As a chef at Farm to Freezer York, she built relationships while sourcing local ingredients that provided revenue for small businesses and farmers. This union between local resources transfers to the table. She hopes to inspire others to support the community by dining on local faire.

Infusion Indian Kitchen, the Taste Test Bar, and the Courtyard Cantina will be celebrating July 5th at 4pm. 

ABOUT INFUSION INDIAN KITCHEN
Chef Hamir Patel takes traditional Indian recipes and meshes them with tastes from around the world. He was our first ever Taste Test audition and came back for a second audition during Restaurant Week 2017 to secure his place as our first ever pop up restaurant chef. Infusion will pop up for 3 months at a time in our Pop Up Restaurant space at 105 S. Duke St. in the Royal Square Neighborhood.

ABOUT THE TASTE TEST BAR
The Taste Test Bar will accompany whatever concept is popping up at 105 S. Duke St. It will feature a signature selection as well as some concoctions to match the current pop-up concept.

Auditions: Red Toad Tacos

Chefs David Rupp and Brandon Green operated Red Toad Tacos out of a food truck 2013-2015 and are auditioning at Taste Test in hopes of turning their concept into a permanent brick and mortar location. With a combined 40 years in the restaurant industry, they both now teach the next generation of chefs at local culinary schools. Rupp and Green are ready to let their experience shine July 12-16 & 20-23.  

Red Toad Tacos features Mexican street food favorites like spiced corn grilled and topped with crema and queso fresco and of course, an array of tacos. Choose from proteins like pork shoulder or battered fish and finish the meal with a classic dessert of Tres Leche. 

Green is a graduate of Le Cordon Bleu in Pasadena, California and has humble beginnings as a busboy at age 14. He has worked in everything from an Italian restaurant to a farm to table fine dining restaurant in Laguna Beach, CA. His love for Mexican food, however, comes from his grandmother; visits to her home in Ensenada fueled his desire to mimic the street food he had there and learned from her.  

Rupp, a graduate of the PA Institute of Culinary Arts, has also run the gamut of the industry. From operating a small American restaurant and bar in Shillington, PA to a brewpub in Lancaster County that served 300+ per night, David knows the ins and outs of what it takes to be a restaurateur in the Central PA area.

Auditions: Nacho Cabra

Nacho Cabra- The world's first Nacho Pub, presented by Scott Paules and Phil Deren.

Although currently working together in the digital technology industry, Scott and Phil have paired their individual passions outside the office for a combo everyone is sure to love - nachos and beer. Scott's single-layer nachos are made to order and served up fast with your choice of toppings and desired heat level from homemade sauces. Phil's German-purist-influenced beer pairings are guaranteed to quench your thirst and cool your tongue.

An avid home cook, Scott has worked at all levels in a variety of independent restaurants in Pennsylvania, Tennessee, and Florida. He credits each establishment with inspiring him to become his own restaurateur. Phil has been brewing beer at home for over a decade, heavily inspired by his upbringing in Germany and its proud beer culture. For the Taste Test Audition, Phil will present beers he feels best represent the styles of beers he plans to brew if Nacho Cabra becomes a reality.

Join us April 27-30 and May 4-6 to help us decide if this concept should be #yorksnextbite. If this is a success, Nacho Cabra could be one of a few concepts to pop up for 3 months next door at the Taste Test Bar & Restaurant and potentially end up in a permanent storefront in downtown York.

Pari's Tasting Table- Progressive French Creole

Chef Komal Shah has been in the culinary industry for more than 10 years after her education at NCC Culinary Institute in Bethlehem. She has cooked under Chef Emeril Lagasse at Emeril's and NOLA restaurants in New Orleans where she learned the art of both French and Creole cooking as well as under Iron Chef Jose Garces in Philadelphia. Now she wants to pair her knowledge of them together in the ultimate dining experience and open her own concept called Pari's Tasting Table, named after her one year old daughter Pari. 

Komal's menu takes low-country New Orleans style dishes and gives them a traditional French twist with touches of molecular gastronomy. Think five courses of small plates like Cajun Caviar: stuffed apple crepes + beet ginger chutney + celery pearls or Pork Boudin Balls: curry white beans cassoulet + zinfandel reduction + herb gel.

In one word: mouthwatering.

Paco's Tacos- a street taco shop presented by local chef Brando Diaz. 
Brando has had a love for food for as long as he can remember. He wants to set out on his own to cook what he knows best- street tacos with slow roasted meats and scratchmade salsas, fresh guacamole, churros, and more.

I grew up in the small town of Red Lion, PA, with my father owning a pizza shop/restaurant in York and then in Boiling Springs, so all I knew was food. I would enjoy watching my nona cook at home and then work in the family restaurant with my father. My nona, grandmother in Sicilian, would wake up early just to get the pasta sauce started for dinner that day. There were times she spent the whole day doing nothing but cook. My inspiration for wanting to share this type of simple but delicious food with others came from learning and helping her and also getting to eat what was prepared.
