Chefs David Rupp and Brandon Green operated Red Toad Tacos out of a food truck 2013-2015 and are auditioning at Taste Test in hopes of turning their concept into a permanent brick and mortar location. With a combined 40 years in the restaurant industry, they both now teach the next generation of chefs at local culinary schools. Rupp and Green are ready to let their experience shine July 12-16 & 20-23.
Red Toad Tacos features Mexican street food favorites like spiced corn grilled and topped with crema and queso fresco and of course, an array of tacos. Choose from proteins like pork shoulder or battered fish and finish the meal with a classic dessert of Tres Leche.
Green is a graduate of Le Cordon Bleu in Pasadena, California and has humble beginnings as a busboy at age 14. He has worked in everything from an Italian restaurant to a farm to table fine dining restaurant in Laguna Beach, CA. His love for Mexican food, however, comes from his grandmother; visits to her home in Ensenada fueled his desire to mimic the street food he had there and learned from her.
Rupp, a graduate of the PA Institute of Culinary Arts, has also run the gamut of the industry. From operating a small American restaurant and bar in Shillington, PA to a brewpub in Lancaster County that served 300+ per night, David knows the ins and outs of what it takes to be a restaurateur in the Central PA area.
