Bistec features classics from Belgium and France with new twists. Items like steak frites, and moules frites are accompanied by seasonal sides like fresh heirloom tomatoes and green beans almondine. Guests can top it all off with unique desserts like cantaloupe sorbet.

Originally born in Maryland and raised in York, Chef Peter Bova has worked in a variety of kitchens across the country. Most notably, he was the opening Sous Chef at the critically acclaimed Abe Fisher, a fine dining Eastern European restaurant in Philadelphia. He was most recently the opening Sous Chef at Chais Delachaise, a wine bistro in New Orleans. Bova moved back to the York area in 2016 to be near family and assist with his family’s food truck, Forno Bova.
Bova enjoys taking classic fine dining foods and recreating them to be more approachable.
"I can't wait to see what this leads to. I would love to have a permanent concept in downtown York that features great cuts of meat alongside the best of what the season has to offer,” said Bova.
The York community is invited to attend these concept auditions and answer a series of questions about their experience. This will help the Taste Test team make a final determination for which restaurant concept will next occupy their adjoining 105 South Duke St. space for 3 months.
